The chef makes vegetables (finds vegetables) that are the best I have ever eaten. Indeed, I have learned what vegetables taste like from him. What's interesting is that he adds a little something that is just a little different, though he is apparently classically trained. Very creative.
I never order anything specific, just ask him to make me what he thinks best for that evening. I am a vegetarian. I've eaten at the best restaurants all over Europe and the United States.
He competes easily with the very best chefs in the world and is the only Californian chef whom I ask to make whatever he feels like, with complete confidence.
It sounds like I am exaggerating but I am not. I have joked that one of the best cardiac surgeons in the world is probably located somewhere like Idaho at a rural hospital.
And perhaps one of the best chefs in the world is in.......Elk Grove, California.
It's that good.
